I found this recipe on Vegetarian Times’ recipe page. They have a diverse selection of creative, vegan meals. I have learned how to make quite a few things from scratch. The link to the recipe is here.
This may be a new favorite dish. I love the texture of soba noodles. This peanut sauce was savory without being overpowering. The grapefruit and scallions give each bite a nice pop of flavor. I topped it off with fresh cilantro and black sesame seeds, this rounded out the dish nicely.
My Love’s reaction was pretty similar to this, I am guessing he liked it.
